Recipe Week – Cookie & Biscuit

Posted on by

Lots of people detox in January, make fresh starts, resolutions, or aim to shape up.  With all these good intentions that are hard to keep up when it’s cold, dark and sometimes hard to get motivated and inspired, I’m posting some recipes from lovely ladies, whose food is wholesome and always looks delicious.  It’s always good to have some new recipes that have been tried and tested, a bonus if kids love them too.

First up, with have a recipe from the clever lady behind Cookie and Biscuit Danae.  She was saving this recipe for her cookbook, but has kindly shared it ♡ Thank you lovely!

Nutty Nutty Goji Bars
raw, vegan, gluten free, refined sugar free

50g raw brazil nuts
70g raw pecans
30g raw sunflower seeds
150g medjool dates (room temperature)
1tsp vanilla extract
1.5 tbsp maple syrup (optional)
60 ml of melted coconut oil (50g solid)
100g jumbo oats
30g goji berries (or can sub dried cranberries)
2 teaspoons of chia seed

Pulse nuts 2-3 times in food processor, but not too much or it will turn to nut butter!
Add the dates, vanilla, maple syrup and coconut oil, mix until all ingredients are incorporated and a soft “dough” forms.  Remove blade and dump mixture into a bowl.  Stir in oats, chia & goji berries.

Press the mixture into a parchment lined 8x8inch square pan, or roll into small balls. Place in fridge for about 2-3 hours, then slice and enjoy!
you can also freeze them, toss in them in a pack lunch and they will defrost by lunch time!

You can order some amazing vegan treats from the Cookie & Biscuit website and follow them on instagram to see what they’re up to @cookieandbiscuituk

I’m going to be trying these this week!!

I want this in my size too

Sometimes you find something that you wish came in your size and not just your child’s.  This brand makes that kind of thing, Jules.  This unisex brand consists of staple pieces to layer and mix and match to get you through all seasons.  The colour palette of the collection also works really well mixed together in many combinations.  The brand is created by Jules, was inspired and came about after having her son Julien.

The clothes are made in Los Angeles where Jules is based and I can’t wait to get my hands on a couple of pieces for the boys.

Screen Shot 2014-09-30 at 21.20.55Today this little boy, that’s now not so little and taller than me is 15.  15years old, how can that be.  He has changed so much in the last year, some of the things I’ve not been that comfortable with.  Like his voice breaking, he seems to grow inches at a time over night, that terrible fluff that grows on a boy’s top lip!  I have lots of guilt about spending enough time with him and worry about being able to give him the help he needs in the next couple of years for his GCSE’s with his Aspergers.  These things aside, he never ceases to surprise me in some way, he has a sweet soul, and quirks that make him comfortable.  It’s good to be original and be you.  Happy birthday my O x

Young Soles founder Lou has always had a love affair with shoes and has been in the footwear industry for over 10years.  Inspired by childhood memories, music, British heritage and the search for a good shoe for their daughter.  The result is a collection of a good old honest, nostalgic, and well made shoe with a bit of an edge that will last.  They are also about working with your child’s foot, being light, durable and versatile are all important factors.  These shoes aren’t just fashion statements.  Hooray to another great Brit brand on the block!

3 quickies with Lou:
Where do you live and with whom?
I live with my partner Stu and our Daughter Rosie, in East London, close to the Olympic Park

Have you always been a shoe lover, what inspires you?
Always, right from an early age when I used to make paper shoes with my mum, out of newspaper and roll of sticky tape. I followed a career in footwear design, completing a Bachelors and Masters degree and have had a successful career in the footwear industry for over 16 years.  There is alway inspiration to be found, but most of my inspiration for Young Soles comes from childhood memories, British heritage, the music scene, fashion movements and of course my Daughter, the reason I started Young Soles in the first place.

What makes the 3 of you (fam) smile and laugh most at the moment? What’s your favourite fun thing to do together?
Our daughter Rosie is a constant source of entertainment. She has such an innocent and joyful outlook on the world that constantly makes us laugh. Our favourite thing we all do together is, after a long week, a record goes on our vintage record player, the music is turned up loud and we have Friday night dance around the lounge together!

It’s Mother’s Day on Sunday.  I’m not one for the commercial card buying, but I do acknowledge the day and I do think I have a special one as my mum.  It’s also a memory jogger as to how lucky I am to be a mum myself, however hard it can be sometimes I wouldn’t change it for the world and it’s the best thing I’ve ever done.

Happy weekend x

When I have a spare moment from baby, toddler or teenager I am consumed by all things house.  Our move is getting closer, into the little renovation project we took on and it’s far from ready as can be right now.  To keep myself sane and vaguely calm, I’ve been decorating (in my head) and storing images.  These are some wallpaper likes, in case we do a wall or two at some point.
