Foody Friday and BKD intro

Posted on by

photo 1I made these blueberry quinoa slices yesterday and had to share as they were super quick and easy.  Gluten free and a pretty nice Friday sweet treat.

200g quinoa flakes
70g brown rice flour
45g shredded coconut
2tsp ground cinnamon
1tsp baking powder
pinch of salt

80ml coconut oil
125ml runny honey

3 large free-range eggs
finely grated zest of 1 lemon
125g blueberries (fresh or frozen)

Preheat oven to 160ºc.  Combine the dry ingredients in a bowl, then heat the coconut oil and honey over a medium heat until melted.  Pour into the dry ingredients and mix.  Add the eggs and lemon zest to the mix.  Then lastly fold in the blueberries.  Transfer to a shallow tin (like for flapjacks) and press down to even out.  Bake for 20-25mins, remove from oven, let cool and then cut in to slices. Yum!

New to the Lil’ Beans shop from today, keeping on the food theme is BKD.  BKD produce great biscuit decorating kits that kids adore – believe me!  What’s not to love, make a mess decorating biscuits with edible bits and then you get to eat your art at the end.  We have two kits on the shop, an alphabet one and a 3d dinosaur kit.  We have an introductory discount on the kits for a week, enter ABC or DINO at checkout on either of the kits to receive 20% off.

CrayonBox

We’ve got some new crayons available from the store this week by CrayonBox.  Lovely hand made sets that make great little gifts.  We have an Easter set, a great alternative to chocolate for the young ones.  You can also get crayons in the shape of lego men, dinosaurs, hearts, to name a few.  They are a great way to encourage children to colour and draw using these mini characters.

CrayonBox crayons are hand made at home by founder Rebecca.  All are made using high quality non-toxic wax in many vibrant colours.
A little Q&A with Rebecca:
Where do you live and with whom?
I live in a small village in North Yorkshire with my husband Will, our 2 children Oscar & Elsie. And buzz the cat.
When did you start CrayonBox and why?
I started crayon box in October 2013. It was in an attempt to get Oscar to sit & colour. I made him some Lego style crayons, popped a picture on facebook & its just grown from there. It’s been a bit of luck & a lot of hardwork but I’m enjoying every bit of it.
What are your children in to, and what makes them laugh?
Oscar is a typical 3 year old boy. He likes running, bouncing, crashing & just generally making lots of noise. He still rarely colours as that involves sitting still!
His favourite pastime though is playing with Elsie. He spends hours with her trying to make her laugh. He makes her picnics & tells her stories. She’s only 7 months & they already adore each other.

Happy weekend, hope the sun shines where you will be x
